Blue Cliff Monastery Easy Baked Tofu

Here is an estimate of the ingredients:
1/2 box 14oz tofu

2 -1/2 teaspoons salt

1/2 teaspoon of sugar

2 tablespoons of olive oil

2 stalk of scallions

1 cup mushroom (any kind)

few slices of ginger

5 stalks of asparagus or green bean

1 carrot or red/yellow bell pepper

Directions

Preheat oven 380 degrees.

Veggies

Rinse/wash veggies in advance

Cut all veggies. Peel ginger and slice thinly.

Tofu

1. Cut about 7 ounces (one half the tofu block) into cubes

2. Put two teaspoons of salt in a kettle with two cups of water. (The salt helps create a chewy texture to the tofu.)

3. Place the tofu cubes into the water so that the water covers the tofu. (You don't have to boil the tofu. However, it changes the flavor.)

4. Turn the heat up. Once it starts boiling, boil for 5 minutes. Drain.

5. Press on the tofu with a heavy object over a strainer to get the water out.

6. Place the pressed tofu in a bowl.

Mix the Tofu and the Veggies. Toss lightly with 2 tsp. of olive oil and 1/2 teaspoon of salt.

Put in a baking dish. Cover tightly with foil so that the tofu and veggie flavors

can meld in the steam.

Bake for 20 minutes.
